Cashew Chicken

New Year's Resolution Number 1:  Spend less money on food. 

I've stopped eating out unless I'm with friends and started cooking at home again.  I'm also only buying what we need for a couple of days.  I'm tired of buying $100 or more worth of groceries and throwing half of it away.  (I do have some freeze-dried food we can eat in the event of an emergency.  We are not going to starve.)

Every few days I've been trying a new recipe utilizing at least some ingredients I already have on hand.  I made chicken and rice the other day, and had a pound and a half of chicken breast left over, so I had to search for a recipe to use it up.  I chose a Taste of Home cashew chicken recipe from one of my cookbooks.  It's also available online if you click the link.



Look!  I julienned a green bell pepper with my new toy!  Yes, I'm 42 years old and this was the first time I julienned anything.  It's also the first time I cooked with freshly grated ginger.  It smelled wonderful.

100% of the people that rated this recipe online said they would make it again.  I had to add salt and pepper to give it more flavor and my daughter only ate the rice with sauce.  I don't think I'll make it again, but it was edible.  Maybe I'm just used to spicier dishes.

Now I've got a half a pound of sliced mushrooms I need to use...

Cashew Chicken is one my all time favs. My mouth is watering like Pavlov's dog just thinking about it...(drool)

Great resolutions; I need to do the same. Leftover mushrooms are good in alot of things: eggs, salads, pasta sauces, casseroles, soup, veggie dishes, on burgers and other sandwiches, etc. Enjoy!

A tip. Dont buy green peppers. Get the red or yellow ones. Then whatever concoction you put/toss together you will have colour to lift the plate.
What you did above is good healthy food. BUT. No one will ever run to the table to eat it. Another way would be to put a teaspoon of Turmeric in the pan with the chicken or in the water with the rice, never both.

@Tempo: I love Chinese food, but had never tried cashew chicken before. I always go for the spicy stuff there, too.

@grannybunny: Soup sounds good. Perfect weather for a hot bowl. I'm pulling out my soup/stew cookbook.

@Kelly: Worked out a lot better than the first time I used fresh garlic. I should post about that sometime. (Thought a clove was the whole head. We were safe from vampires for a month...)

How can you go wrong with cashews?

I recently went to a local Asian market and guess what everyone was buying by the boatloads? Ginger. I always keep some in the fridge now.
I also made gingersnaps with real ginger, they pretty tasty.
